Soak dried beancurd, mushroom and black fungus in warm water for more than 2 hours in advance.

To make a Soul Sauce:
3 spoons cooking wine +2 spoons raw soy sauce +1 spoon mushroom oyster sauce +1 spoon tomato sauce +1 teaspoon white granulated sugar +1/2 spoon salt + right amount of white pepper +10 spoons clear water. Stir well.

Blanch the soaked dried beancurd fungus in superheated water and remove it for later use in about one minute.

The Dutch beans will be boiled out immediately. Don't wait for the water to boil, or they will not be crisp when fried later.

Add a small amount of oil to the pan, first stir-fry the garlic grains, then put the chopped carrots, onions and mushrooms into the pan to give off the fragrance.
