The washed tendon is soaked in clear water for half a day, and the blood inside is soaked out by changing the water several times in the middle.

Prepare spices: star anise, cinnamon, bay leaf, dried chili, angelica dahurica, rind, cumin, rock sugar, a little.

Pour 500 grams of soy sauce into a casserole and add the spices. Bring to a boil over high heat, turn to medium heat and cook for 5 minutes, boil out the fragrance in the big material, turn off the heat and cool it.

Add 60 grams of sweet noodle sauce and 40 grams of soybean sauce to the cooked sauce. Add the shallots and ginger, the coriander and a little pepper and mix well. There is no need to add salt. Soy sauce, sweet noodle sauce and soybean sauce are used to adjust the salinity. The spiced beef made in this way has a strong flavor and is especially delicious.

Cover with cling film and refrigerate for over 10 hours. Can be prepared during the day and marinated at night.

Put the marinated beef in the casserole on the fire, add the right amount of water to the beef, simmer in the casserole for about one and a half hours, then turn off the fire.

You don't need to take it out immediately after turning off the fire, and leave it in the pot until it is cool.
