Yunnan Small Pot Rice Noodle with Drunken Soup
Although it is called small pot rice noodles, I really cooked a big pot today. The family was so satisfied that they drank all the soup. I use this semi-dry rice noodle and cook it for a few minutes. If it is full dry rice noodle, soak and cook it according to the packaging requirements.

Boil the water in the pot, add the rice noodles and cook until there is no white core. Use chopsticks to break it. Remove it and rinse it with cold water until the water in the container becomes clear. Dip the rice noodles in a large bowl.

When cooking rice noodles, cut vegetables, wash vegetables first, peel tomatoes and cut them into small cubes, cut leeks into small sections, cut baby vegetables from the middle, and chop ginger and garlic into powder.

Heat the pan, add oil, add ginger and garlic and stir-fry until white.

Add a proper amount of hot water to boil and taste the taste. You can add a proper amount of salt according to your personal taste. The soup is slightly salty than usual, because rice noodles and baby vegetables will absorb some salty taste. If the taste of the soup is just right, the taste of the soup will be weak after the rice noodles are cooked. Cook the soup and fry the eggs in another pan until they are slightly yellow on both sides.
